The craze for pulled pork and bbq is still going strong. In every food market or event there’s always a bbq stand which is selling pulled pork and ribs. It’s also become popular and a staple in lots of restaurant menus too.
I’ll admit, I like pulled pork but not in large quantities, I’m definitely much more of a rib person! I always like to try some from someone else’s plate i.e. Mr Rock Bakehouse but whenever I’ve ordered it I’ve got bored of it and found it quite rich.
We had some friends over for dinner and I wanted to make something ahead so that I wasn’t worrying too much about it during the day so I decided to use my trusty slow cooker (one of the best wedding presents and more stories to come about that!). I found the pork rub recipe on Pinterest and it sounded like it would taste good, if you’re a Pinterest user you’ll know that some things just don’t look right so it’s always a risk!!
I bought a large shoulder of pork and mixed all the herbs and spices the night before. I removed the excess fat from the pork and then rubbed the spices into the pork and into all the nooks and crannies and put it in the fridge overnight. To be honest for a shoulder of pork to feed 4 (approx 1.2kg) you only need to use half the spice recipe and you can keep the rest for the next time.
The great thing about the slow cooker is that all you do is throw everything in and just wait for it to cook. I placed half a cup of water at the bottom of the pan and then placed the pork and in and cooked it on high for 8 hours. The longer the better with a slow cooker.
The result was a delicious pork that was lightly spiced with a slight bbq smokey flavour. I served mine with confetti corn (corn and peppers pan fried together), sweet potato chips and homemade BBQ sauce.
For the rub
1 tablespoon ground black pepper
1-2 teaspoons cayenne pepper
2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons dark brown sugar
1 tablespoon dried mixed herbs (or oregano)
4 tablespoons smoked paprika (you can use normal paprika but I like the smokiness!)
1 tablespoon table salt
1 tablespoon granulated sugar
1.2kg boneless shoulder of pork
1. The day before mix the rub ingredients together in a bowl and then rub all over the pork and place in a dish covered with clingfilm and rest in the fridge overnight
2. When you’re ready to cook, pre-heat your slow cooker to high heat. Add half a cup / 100ml cold water to the bottom of the slow cooker
3. Place the pork in the slow cooker, put the lid on and cook for 8 hours until the pork falls apart
4. Serve with sweet potato chips and corn or you can put the pork in buns and serve
